Red Dead Online cut content: horse fencing and sheriff’s deputy role

The YouTuber McDizzle Gaming found the content that was cut from Red Dead Online. Perhaps Rockstar Games were planning big game updates but never made it to release.
So, in the game files, the YouTuber found an NPC named Seth Briars. We used to meet him in Red Dead Redemption. Seth Briars was a very strange grave robber and helped John Marston, the main character of the game.
Interesting information about horse fencing. The YouTuber believes that players could tame wild horses, sell them and probably even stable them.
Also in the game files, mentions of working as a sheriff's deputy were found. There is something similar in Red Dead Online — the role of a bounty hunter.
